Over the weekend I had a major urge to make some sweet treats, so I started off with something simple first.
Rocky Road fridge cake, who can say no to this chocolaty treat.
It only needs a few store cupboard ingredients and then you can pimp it up with what ever you fancy!
- Melt 125g butter and 300g chocolate (I used a mix of milk & dark)
- Add 3tbs golden syrup
- Then mix in 200g crushed up biscuits (I used digestives) and 100g marshmallows (either mini ones or cut up large marshmallows)
- This time I added a handful of white chocolate buttons, chopped up milky way bars and some of my favourite Terry's chocolate orange!
- Combine until all ingredients are covered in the melted chocolate and press into a 9" square tin
- Chill for a couple of hours and cut however you wish!

One of my favourite easy recipes has to be Chicken & Bacon Lasagne, which was actually adapted from the Bacon & tomato lasagne in the Philadelphia Cookbook.
It takes all of 15 minutes to prepare and then it sits quietly in the oven for 20 minutes ~ EASY PEASY!
What you'll need:
Olive oil
chicken breast
bacon
tin of chopped tomatoes
diced onion
grated cheese
crushed garlic
cream cheese
milk
dried herbs
lasagne sheets
Method:
- Brown off the chopped onion, bacon and chicken in the oil for five minutes until coloured.

2. Whilst the meat is cooking mix two heaped tbsp of cream cheese with two tbsp of milk.
3. Once the meat is browned add the chopped tomatoes, garlic and herbs then simmer for five minutes.
4. After simmering the liquid set the pan aside to cool and then add the cheese mixture.
5. Now the lasagne can be assembled, add the meat mixture to a suitable dish then the lasagne sheets.......repeat until all the mixture has been used.
6. I know top the last lasagne pasta sheets with a mix of three tbsp cream cheese, 60g grated cheese, three tbsp of milk and a dash of dried herbs.
7. Pre heat the oven to 190C.
8. Bake for 20 minutes.

Philly Mango Chicken
A great quick and simple tea time suggestion to use up leftovers!
I'm always trying new recipes that all the family will enjoy and this one definitely fits that bill.
Ingredients;
Cubed chicken breast (can also be made using any left over meat, it works great with pork)
Curry powder
Mango chutney 1tbsp
Philadelphia cream cheese 100g
Milk 2tbsp
- Heat oil in a pan and cook the chicken until browned.
- Reduce the heat and add 1tsp of curry powder to the pan, once its incorporated add the milk, Philadelphia and mango chutney to the pan.
- Stir until the Philly melts and forms a creamy sauce.

On the whole I'll eyeball the sauce ingredients adding more milk for a saucier dish, and once I've served up the boys meals I usually add more mango chutney to ours for a bit more spice.
