I haven't written a meal plan post in a while, with the busy summer holidays and days out I've mostly winged it.
We're off on holiday next week so I thought I'd go through the cupboards and use up all those items hiding in the fridge and freezer!
So here's what I've come up with:
Monday - Chicken Kievs, roast potatoes and carrots.
Tuesday - Freezer meal (something thrown together from the freezer probably with chips)
Wednesday - Creamy garlic mushroom pasta (throwing together all the bits left in the fridge)
Thursday - Curry with rice popadoms and nann bread- korma or tikka masala
Friday - Takeaway
And then from Saturday we'll be in sunny (fingers crossed) France.
We are so looking forward to relaxation and family time.

I recently stumbled across a quote, it made me think of all the little day to day things the boys do that I stress over;
Leaving toys in every room ~ including the bathroom
Getting Wheetabix in the carpet
Having grass stained knees on their trousers
Having muddy fingernails
Hidding the car keys
Doing naked laps of the house after a bath
Roaring like a dinosaur
Laughing at my boobies when I get changed!
Soon my little guys won't need me to wash their hair, to point out the aeroplanes in the sky or to make sure their shoes are on the right feet!
In the blink of an eye they'll be little men.
I've decided the toy room can stay messy, the fileling cabinet untidy and the sound of roaring can be heard daily!
For as long as I can I will let them be little!!

Wow that year went fast! Harry has now completed his first year at school & will be moving up to year 1 in September.

He is so excited to be continuing his school journey.
I never thought he'd be one of the children who'd run into the playground to find his friends and I wouldn't see him until the bell rings and he is grabbing his book bag from me whilst I try to grab a goodbye kiss!
I went into the playground that first morning fully expecting him to be hanging off my leg bawling his eyes out, too my surprise though we haven't had a single tear about school.
This year has seen some difficult times for our boy, he is being followed by a Speech and Language therapist as he had and still has a speech delay - which school has 90% improved. I am so grateful to his teachers , teaching assistants and friends for helping Harry with his speech.
I worried he wouldn't 'fit in' to the classroom with his speech difficulties but I was assured within the first few days when his teacher told me 'If I can't quite understand him, his friends always know what he want/needs or is trying to say'!
Well a year on and most days Harry has verbal dihoria! He talks so blooming fast sometimes I can't believe it's the same kid talking to me!
He has learnt and developed so much, soaking it all up like a sponge and we couldn't be prouder if we tried (yes I know we're bias!)

What was your best bit of reception class? Getting to play with dinosaurs
What was your favourite job in class? Being pencil monitor!
What do you do at playtime? Had fruit snack & milk. Played Star Wars.

I have always been very aware of how much food waste their is in our house and over the past few months I have been trying hard to change.
Check all your cupbaords, fridge and freezer before shopping, devise a meal plan for the coming week or weeks make a shopping list and stick to it.


Here are my top tips to help your food go further:
Use a whole chicken to make more than one meal (depending how big your family is!) for the four of us I can make a chicken stretch to three meals, a roast dinner, curry and a pie filling.
Cooking too much mash potato! I can never get just the right amount of mash potato! use it the following day to top a pie, make fish cakes or bubble and squeak.
Bananas looking a bit black? admittedly bananas do not hang around long enough to get black with my two monkeys, but i have been known to buy some and hide them to add into choc chip muffin batter.
Left over roast dinner Chuck anything left over from your roast dinner ands turn it into soup for Mondays and even Tuesdays lunch (that's my Mums top tip - Thanks Mum!).
Smoothies are so popular at the moment - instead of instantly throwing away fruit and veg that is starting to look a little past its best pop them all into the blender with a dash of milk to make a refreshing and healthy way to start the day.

When unpacking my food shop I'll leave all the meat until last as 9 times out 10 it gets taken out of the packaging and portioned up; this means less waste as I've portioned up enough meat for each meal and with out all the supermarket packaging I have more room in the freezer!
Portioning examples:
500g pack of mince meat gets divided into two bags
6 pack of chicken breasts gets divided into two
Freeze sausages in 4's (sometimes the boys will have sausages if we have steak so I only need 4, if we all eat them I need 8)

Bulk cooking meals can also help to reduce waste the same way as freezing left over portions of meals for another day.
My top three meals to bulk cook are cottage pie with a sweet potato top, fish cakes and sausage casserole.

Want a recipe to incorporate your leftovers.........
If you've cooked too much bacon for your weekend breakfast why not add it to a risotto (with left over chicken from a Sunday roast!) or crush up the crispy rashers to top a soup for a little extra crunch.
One pan risotto
300g Arborio risotto rice
1 Onion
1 Leek
Garlic to taste
1 litre Stock (I use Boullion vegtable powder)
Peas
Olive oil
White wine (optional)
Butter
Left over meat can be added too
Heat 1tbsp olive oil
Stir in onions & leek until soft
Add rice and garlic stiring to coat in the oil (around a minute)
At this point you can add a glass of wine, stirring constantly until absorbed
With heat at medium-high add the stock a ladel at a time stiring until absorbed
reduce heat to medium and cook for around 15-20 minutes (the rice should be al dente)
Add any meat toward the end of cooking ensuring it is piping hot when served.
I add the peas around 3 minutes before the end of cooking just to soften them.
Butter is added just before serving to give a nice creamy finihs.
Sprinkle bacon piesces on top or mix through.

I have seen a few other blogger do this style of picture and though it would be fun for us and Harry to look back on in years to come. I look forward to starting it with Freddie in a couple years time when he starts school.
The first job of the holidays was to build the marble run Harry had for his birthday, easy right?? Wrong! this little thing took me all of three attempts and an hour to complete.

With it being the begining of the school holidays and havng no plans this week or the early morning rush, I tought it would be a good time to start potty training Freddie......
He hasnt had as many accidents as I expected him too and is doing quite well, until yesterday when every inch of my living room carpet had a puddle at some point - que stressed out Mummy wanting to sit in the corner and have a little sob!
Making a sticker chart has helped with the victories, he gets so excited to place a sticker on his chart once a wee or poo is in the potty. I wanted something to help keep him motvated.
